      QingXi Sichuan Pepper: Sourced from Qingxi village in Hanyuan county, Sichuan, this amazing Red Sichuan pepper, also known as "Tribute Pepper," boasts a strong cool citrusy, floral fragrance and taste accompanied by an intense numbing sensation.

      Maowen Sichuan Pepper: Hailing from Maoxian County, Sichuan, this variety is also called the “Prince of Sichuan Pepper” and is celebrated for its pinkish color and potent, berrylike taste. It has nuanced aromas and flavors including dried berries, green cardamom and rose pedals.

      Gansu Sichuan Pepper: Gansu, otherwise known as Da Hong Pao, is a favorite pepper for many Chinese as it really encapsulates the classic Sichuan flavor with bright red, lavender tones and lots of warmth. Balanced and slightly earthy.

      JinYang Green Sichuan pepper: Produced in Jinyang County, Sichuan Province, this green Sichuan peppercorn is renowned for its bright green color, rich aroma, slight bitterness, balanced citrusy taste and moderate numbing taste.

      Batak Pepper: Grown semi wild on the slopes of the worlds largest volcanic crater, Batak Peppar has a unique citrus medley of lime, lemongrass, herbs and teas that can totally change the course of a dish.

      Mac Khen Pepper: A wild growing pepper in the northern parts of South East Asia with a particular citrus flavor reminiscent of clementine and mandarin and a woodsy, sweet almost rooibos like aroma.

      QingXi Sichuan Pepper: This Sichuan Pepper differs quite a lot from traditional ones adding more citrus, acidity and coolness to dishes. We love using this pepper when we are more experimental or cooking cooler dishes such as smashed cucumber, chicken salads or dumpling dips. Very interesting when trying to infuse the Sichuan flavor into other spheres like desserts, baking, dressings and ceviche.


      Maowen Sichuan Pepper: The “Prince of Sichuan Pepper” has a robust flavor profile and lots of numbing sensation that works well with all kinds of Sichuanese dishes. It is more similar to the Gansu variety than the QingXi, but still has a bit of a different profile and even more punch.


      Gansu Sichuan Pepper: Has a warmth that really encapsulates the core of Sichuanese food and the essence of Ma La (Numbing & Hot). A great high quality all round Sichuan Pepper for all those wonderful dishes like Mapo Dofu, dry fried greens beans, Kung Pao Chicken, La Zi Ji, 2 cooked pork, Dan Dan noodles.

      JinYang Green Sichuan pepper: The chinese dish Suan La Tu Dou Si is one of our absolute favorite dishes. Shredded crispy potatoes with hot and sour components and lots of JinYang Green Sichuan Pepper. Love it in beef broth, stir fries with whole chili, minced pork, chopped celery, ginger and some coriander. Complements white fish, chicken and vegetables.


      Batak Pepper: This flower pepper loves coconut. It loves chili. It loves ginger. Lime. Garlic. Galangal. Rice Vinegar. Coriander. We use it with salmon, in pumpkin soups, vegetable stir fires, mayonnaise sauces, chili sauces, pasta, noodles. Top some store bought mango sorbet and you have a wonderful dessert. Mix it with salt and chili and have as a condiment.


      Mac Khen Pepper: The mandarin sweetness of this flower pepper makes it perfect for poultry and pork. We made a Duck a L’orange with this one and it was absolutely stunning. Also very nice in dressings, homemade spice blends and citrus salads.
